  1. Four Tablespoons of Gammons Barbecue or Chicken Seasonings
  2. Six Pounds or Two Slabs of Spare Ribs or Two Chickens Cut in Half
  3. One-and-a-Half Cups Barbecue Sauce of Your Choice
  4. A Half-Cup Beer (Any Brand - Optional)
  5. Sprinkle the Gammons Barbeque Seasonings on the slabs of ribs, massaging it into the meat. (For chicken, use Gammons Chicken Seasonings).
  6. Cover the seasoned ribs or chicken with plastic wrap and refrigerate overnight. (24 hours is even better.)
  7. When you are ready to grill, bring the ribs to room temperature first. We won't bore you with basic grilling instructions, but use low heat, whether using coals or gas. If cooking with charcoal, pile the coals to one side to provide indirect heat. If using gas, turn off one side of the grill so that the ribs/chicken will cook slowly.
  8. For extra smoky flavor, use hardwood chips. (Tip) Cut up onions and fresh garlic, and put in a saucepan. Every 15 minutes, drop a handful of the mixture into the bottom of the grill on the coals to give a unique delicious flavor.
  9. Grill your ribs (or chicken) for at least an hour and a half, turning them every 30 minutes and basting them with beer if you want. (Beer not necessary)
  10. During the last half-hour, begin basting with Gammons Barbecue Sauce.
  11. Your ribs or chicken are done when the meat shrinks from the bones. Test them by grabbing a bone and twisting it (using tongs or a hot pad); the bone should slip from the meat. If you use a meat thermometer, the meatiest part of the ribs should register at 160 degrees °F, and the chicken should be at about 170 degrees °F.
  12. You now have a batch of tender and delicious Succulent Gammons Style Barbecue Ribs or Chicken. This recipe will make you the chef of the family.
